Healthcare is always good. I disagree with archiects. If people don't buy real estate (like in today's market) there is no need for a lot of architects.
I would say communications is going to be huge over the next 25 years. Cell phone's, entertainment (tv), internet. I would go into something that has to do with communication and media.

Health care due to people getting older. That does not mean you need to be a doctor, there are tons of related fields such as nursing, nursing assistants, medical assistants, dental assistants, techs who work in hospitals, etc.
Many of these career do not require a four year degree. Some may require a two year degree while others may only require a diploma or certification type program that can be completed in less then a year. Some can maybe even be completed in a few months.
A lot of people start off in a lower career since they can complete training quickly and start making money, then later in their career go back to school in order to advance their career or change to a related career.
With the economy is poor shape and many people losing their jobs or worried about losing their jobs I would suspect more and more people will start to get on the health care job bandwagon since that is one of the only remaining career fields with lots of growth potential and demand.
